Very Plum GF Muffins

The plum tree has delivered more plums than one family can ever eat. We have shared our bounty with the neighbors. And I’ve gotten creative with my goal of “No plum left behind”.

Ingredients

2 cups GF flour

2 tsp baking powder

1/2 tsp baking soda

1/2 cup sugar

2 eggs

1/2 cup olive oil or coconut oil

1 cup plain yogurt

6 - 8 plums (washed and chopped)

Instructions

  • Preheat oven to 250 Farenheit

  • Mix flour, baking powder, baking soda and sugar in mixing bowl

  • Mix eggs, oil and yogurt in separate mixing bowl

  • Pour wet mixture into dry mixture and mix slowly until combined

  • Carefully mix chopped plums into the batter

  • Pour mixture into lined muffin tin

  • Bake 20-22 minutes. Poke the center of a muffin with a toothpick. If it comes out clean, they are done.

Optional

  • Course sprinkling sugar added to the top of muffins before baking
