Best Dang GF Carrot Banana Muffins

 

Quite possibly the tastiest GF baked good I have ever made!

Muffins

Dry Ingredients

1 1/2 cups GF flour (I use King Arthurs GF flour)

1 tsp baking soda

1 1/2 tsp cinnamon

1/4 tsp ginger

1/4 tsp nutmeg

1/4 tsp salt

Wet Ingredients

1 1/4 cup shredded carrot

1 ripe banana (mashed)

1 egg

1/2 cupe maple syrup

2 tbsp coconut or olive oil

1 tsp vanilla extract

1/4 cup chopped walnuts

1/2 cup milk

  • Preheat your oven to 350 Fahrenheit.

  • Spray muffin tin with cooking spray or use cupcake liners.

  • Mix the dry ingredients in one bowl. Mix the wet ingredients in a separate bowl. Carefully fold the wet ingredients into the dry ingredients until it is throughly mixed.

  • Pour batter evenly into muffin tin.

  • Bake for 20 - 25 minutes. Use a toothpick to poke the center. If it comes out clean, the muffins are finished.

  • Let cool completely before frosting.

Frosting

8 oz whipped cream cheese

1/4 cup maple syrup

1/8 cup honey

1 tsp vanilla extract

1 tsp cinnamon

  • Add maple syrup, honey, vanilla and cinnamon to the cream cheese. Stir until smooth. You may use a food processor to help with the smoothness.

  • Frost each muffin

  • Enjoy!
